Cherry-Licious Popsicles

Fresh cherries and the goodness of homemade hung curd make for a refreshing, healthy and easy-to-make frozen dessert. Perfect for those times when you need a cool break!
I eat fruits, but there’s only a handful of them I absolutely adore. And cherries – those tart, sweet, firm little nuggets of flavour are among them. The fathership is well aware of my devotion, and come summer, he’s always on the lookout for these stone fruits. And when they’re home, I devour by the boxful! But this time around, I saved some to make some frozen low-sugar desserts, especially since I’ve gone overboard on ice creams and kulfis this past month. Ideally, I should abstain from anything ‘fattening’, but in my books, a little bit of raw honey never harmed anyone. And the blistering heat demands something cool and refreshing (other than iced coffee)! Hence, homemade Cherry-Licious Popsicles.

These popsicles are fun to make and lickable delights, a delightful combination of creamy curd, tart cherries, and sweet honey. Wait… where does the word ‘labour’ come in when I’ve said ‘easy’? By labour, I mean the pitting of the cherries, which, to be honest, is rather relaxing. One of those mindless jobs that allow you to just be rather than focus. Just grab a steel straw or a largish pin and shove it through the back of the cherry to push out the pit and the stem. You’ve got it!
THINGS TO REMEMBER WHEN MAKING THESE POPSICLES
